As my friend commented, there was more cheese running off the side of the crock than in the bowl. But even if that hadn’t been the case, the problem with this soup lay in the broth. You could smell the brandy eminating out of it (which could have been good), but the onions were not caramelized. In addition, the onions were too finely chopped and there were too many of them. It created a broth that reminded me more of pea soup than onion soup. The cheese was a very mild swiss.

I had the french onion soup at the Seattle restaurant yesterday. You should try it downtown. I think it was much better than what you had at the Bellevue restaurant.
